…after it’s shut off. What do people do when the plumbing in the wall is above the faucet, causing extra water in the line to drain out after shut-off?

I know what you mean. There is no easy solution to this. I would just live with it. Unless you want to spend a lot of money.
Replace the washers inside the control valves (knobs) or replace the whole inside assembly. The complete assembly is sold at the hardware superstores for $5-$30 depending on make/model. It’s easy to fix. Make sure you shut the water to that line off before you disassemble.
If the control valves are working properly when you shut the water off and the line empties (perhaps 12″ - 18″ of pipe) there should be no further leaking/dripping.
